Wine Making

•Oak – Coopers; Sirugue and Vicard, barrel fermented in new and older French Oak aiming at a minimum of 40% new wood
•Control of the ferment temperature is achieved with the use of small open top fermenters with frequent plunging a minimum of 4 times daily. With a high percentage of whole berries. No residual sugar

•Cropping level 2.5-3 tonne per acre
