•Rich and elegant French Oak
•Smooth palate of ripe fruits , with balanced acidity and tannin

Wine Making

•Wine maker and viticulturist Patrick Hardiker
•Oak – Coopers; Sirugue and Vicard, barrel fermented in new and older French Oak aiming at a minimum of 40% new wood
•Control of the ferment temperature is achieved with the use of small open top fermenters with frequent plunging a minimum of 4 times daily. With a high percentage of whole berries. No residual sugar
•Cellar 5-10 years

•Clone SA 125, D3V14, FVD3V14
•Cropping level 2.5-3 tonne per acre
•Trellis: VSP
•Soil: granitic, gravelly sandy loam with a rich topsoil on a base of granite
•Planted 1997
